OOLONG
As it is partially oxidised, oolong lies between green and black tea. The tea leaves unfurl to release amazing taste-bud awakening tastes and aromas - rose, cinnamon, quince, orchids, honey, cocoa nibs, orange blossom to name a few!
Oolong tea is cleansing, cooling, digestive and cholesterol lowering.

Kate's tip: enjoy a really good cup of oolong by using a little more tea with a little less water. Try 1 1/2 heaped tsp per cup with cooler water (80-90c depending on the oolong) and infuse for 1 - 2 minutes (again depending). Remember to explore the tea by re-infusing the leaves!
