GREEN TEAGreen tea is to us the spinach of the tea world! Full of anti-oxidant and vitamin goodness and really tasty! The tea leaves are plucked and then immediately steamed or pan-fired to stop the oxidizing enzymes. It's a bit like freezing a newly picked petit pois - when you come to eat it, it’s still full of the goodness it had when it was picked. Fantastically fresh, grassy, bitter-sweet, nutty, citrusy and sometimes biscuity; green tea is invigorating, revitalising and refreshing. It warms the soul and boosts the mind!

Kate's tip: So, you think you don't like green tea? Have you had an awful bitter green tea? Remember, never pour boiling water onto the grassy leaves!  It burns them and you'll be left with a really horrid cup of tea. Wait for the kettle to cool (anywhere from 50-70c depending on the tea) and only infuse for 1-2 minutes.
